You will need:
- 150g button mushrooms, sliced
- 2 green onion (spring onion), chopped
- 100g grated tasty cheddar cheese
- 30g grated parmesan cheese
- 3 eggs
- 1 cup (250ml) cream
- 1/2 cup (125ml) milk
- 1/4 cup (35g) plain flour

What to do:
- Combine mushrooms and onions in greased shallow 1.75 litre (7-cup) ovenproof dish.
- Sprinkle with cheddar and parmesan cheeses.
- Whisk eggs, cream, milk and flour together in large jug or bowl; pour over cheeses in the dish.
- Bake, uncovered, in moderate oven about 30 minutes or until just set.
This can be made a day ahead, and serves 6.
