You will need:
- Chocolate biscuits or chocolate sponge cake
- 500 grams of A.B.C Farms’ Mascarpone Cheese
- 50 grams powdered sugar
- Espresso or strong coffee powder
- 2 yellows of eggs
- 2 egg whites, whipped
- Brandy or Rum
- Cocoa or chocolate powder
- Almond essence

What to do:
- Spread the chocolate biscuit or chocolate sponge cake with 2-3 teaspoons full of rum or brandy in a dish and sprinkle coffee powder over it.
- Put the Mascarpone, egg yellows, sugar, 4 teaspoons of rum and 10 drops of almond essence in a bowl and mix well. Fold the beaten egg whites into the mixture.
- Pour the mixture over the layer of sponge.
Before serving, sprinkle cocoa or grated chocolate over it, adding a sprig of mint for color.
