You will need:
- A Large bowl
- A Pan (20cm diameter and 6.5cm depth)
- 250 grams plain sweet biscuits.
- 100 grams A.B.C. Farms butter
- 500 grams cream cheese
- 200 grams whipping cream
- 250 grams Quark cheese
- 120 grams sugar
- 1/3 cup fresh lemon juice
- Gelatin
- Fresh Strawberries

What to do:
- Finely crush the biscuits and put them in a bowl. Melt and add the butter. Mix well. Press onto the base and sides of a well-greased pan. Chill for 1 hour.
- Beat the Cream cheese until soft and smooth. Gradually beat in the whipping cream, the Quark cheese, sugar, lemon juice (use only ripe lemons, green lemons prevent the filling from setting) and 1 tsp of Gelatin dissolved in 1 tbsp hot water.
- Slice the strawberries and arrange them around the base of the crumb crust in the pan. Carefully pour the filling into the crust over the strawberries. Chill overnight.
You can also top the cheesecake with jelly. Make the jelly according to the instructions on the pack and spoon cooled jelly evenly over the chilled cheesecake. Decorate the cheesecake with strawberries dipped in jelly and refrigerate until set. Serve chilled with or without fresh strawberries.
